🥘 Cheesy Chicken and Broccoli Casserole

✅ Ingredients:

  • 2 cups cooked chicken, shredded or chopped (rotisserie works great)

  • 2 cups broccoli florets, steamed or lightly cooked

  • 1 cup cooked rice (or sub pasta or cauliflower rice)

  • 1 can (10.5 oz) cream of chicken or mushroom soup

  • ½ cup sour cream or Greek yogurt

  • 1 cup shredded cheddar cheese (plus more for topping)

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • Salt & pepper, to taste

  • Optional topping: crushed Ritz crackers, panko breadcrumbs, or French fried onions mixed with 2 tbsp melted butter


🔪 Instructions:

  1. Preheat oven to 375°F (190°C).

  2. In a large bowl, mix together soup, sour cream, garlic powder, onion powder, salt, and pepper.

  3. Add in chicken, broccoli, rice, and cheese. Stir until combined.

  4. Spread mixture into a greased 9×13 casserole dish.

  5. Sprinkle with extra cheese and your choice of topping.

  6. Bake uncovered for 25–30 minutes, until bubbly and golden on top.

  7. Let rest 5 minutes before serving.


🛠️ Variations:

  • Low-carb: Use cauliflower rice instead of rice.

  • Vegetarian: Skip chicken, add mushrooms or chickpeas.

  • Spicy: Mix in chopped jalapeños or a dash of hot sauce.
