Banana Caramel Roll Cake

A banana caramel roll cake combines the sweet flavor of bananas with rich caramel for a delightful dessert. Here’s a recipe to make it:

Ingredients:

For the cake:

  • 3 ripe bananas, mashed
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (optional)

For the caramel sauce:

  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • Pinch of salt

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and line it with parchment paper, leaving some overhang on the sides for easy removal later.
  2. In a large mixing bowl, whisk together the mashed bananas, eggs, granulated sugar, vegetable oil, and vanilla extract until well combined.
  3. In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon (if using).
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  5. Pour the batter into the prepared baking dish and spread it out evenly.
  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  7. While the cake is baking, prepare the caramel sauce. In a saucepan, combine the granulated sugar and water over medium heat. Stir until the sugar dissolves.
  8. Once the sugar has dissolved, stop stirring and let the mixture come to a boil. Cook without stirring until it turns a deep amber color, about 6-8 minutes.
  9. Remove the saucepan from the heat and carefully pour in the heavy cream. Be cautious as the mixture will bubble up.
  10. Stir in the unsalted butter and a pinch of salt until smooth and well combined. Let the caramel sauce cool slightly.
  11. Once the cake is done baking, remove it from the oven and let it cool in the baking dish for 5-10 minutes.
  12. Using the parchment paper overhang, carefully lift the cake out of the baking dish and transfer it to a wire rack to cool completely.
  13. Once the cake has cooled, pour the caramel sauce over the top, allowing it to drip down the sides.
  14. Slice the banana caramel roll cake into squares and serve.
