Banana Pudding

Banana pudding is a classic Southern dessert that typically consists of layers of creamy vanilla pudding, sliced bananas, and vanilla wafers. Here’s a simple recipe for making banana pudding:

Ingredients:

  • 3/4 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 3 cups whole milk
  • 3 large egg yolks, beaten
  • 2 teaspoons vanilla extract
  • 3 ripe bananas, sliced
  • 1 box (about 12 ounces) vanilla wafers
  • Whipped cream for topping (optional)

Instructions:

  1. In a medium saucepan, whisk together sugar, flour, and salt.
  2. In a separate bowl, whisk together the egg yolks and milk until well combined.
  3. Gradually whisk the milk mixture into the sugar mixture in the saucepan, ensuring there are no lumps.
  4. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a boil. This should take about 10-12 minutes.
  5. Remove the saucepan from heat and stir in the vanilla extract.
  6. Allow the pudding to cool for a few minutes, then cover it with plastic wrap, ensuring the wrap is in direct contact with the surface of the pudding to prevent a skin from forming. Chill the pudding in the refrigerator for at least 2 hours.
  7. Once the pudding has chilled, assemble the banana pudding. In a serving dish or individual cups, layer vanilla wafers, sliced bananas, and pudding. Repeat the layers until all ingredients are used, finishing with a layer of pudding on top.
  8. Refrigerate the assembled banana pudding for at least 4 hours or overnight to allow the flavors to meld and the dessert to set.
  9. Before serving, you can top the banana pudding with additional sliced bananas, crushed vanilla wafers, or a dollop of whipped cream if desired.
