Key Lime Pie

Ingredients:

For the Graham Cracker Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 6 tablespoons unsalted butter, melted

For the Filling:

  • 4 large egg yolks
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup fresh key lime juice (regular lime juice can be substituted)
  • Zest of 1-2 key limes for garnish (optional)

For Whipped Cream (Optional Topping):

  • 1 cup heavy whipping cream
  • 2-3 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Prepare the Graham Cracker Crust:
    • Preheat your oven to 350°F (175°C).
    • In a bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are moistened.
    • Press the mixture evenly into the bottom and up the sides of a 9-inch pie dish.
    • Bake the crust in the preheated oven for 10 minutes. Remove and let it cool while you prepare the filling. Keep the oven on.
  2. Make the Filling:
    • In a mixing bowl, whisk the egg yolks for a minute until they become slightly thickened.
    • Add the sweetened condensed milk and whisk until well combined.
    • Gradually add the key lime juice while continuing to whisk until smooth and well incorporated.
  3. Fill the Crust and Bake:
    • Pour the filling into the cooled graham cracker crust.
    • Return the pie to the oven and bake for 15 minutes or until the edges are set but the center is slightly jiggly.
    • Remove the pie from the oven and let it cool completely. Refrigerate for at least 2 hours or until fully chilled and set.
  4. Prepare Whipped Cream (Optional):
    • In a chilled mixing bowl, whip the heavy cream until soft peaks form.
    • Add the powdered sugar and vanilla extract, then continue to whip until stiff peaks form.
  5. Serve:
    • Spread or pipe the whipped cream over the chilled pie.
    • Optionally, garnish with fresh key lime zest before serving.
