Here’s a simple and delicious recipe for Blueberry Breakfast Quesadillas — perfect for a sweet morning treat or brunch idea. They’re crispy on the outside, gooey and fruity on the inside, and ready in minutes!


🫐 Blueberry Breakfast Quesadillas

🍽️ Servings: 2 | 🕒 Prep: 5 mins | Cook: 8-10 mins


🧾 Ingredients:

  • 4 small flour tortillas (or 2 large, cut in half)

  • 1/2 cup cream cheese, softened

  • 2 tbsp honey or maple syrup

  • 1 tsp vanilla extract (optional)

  • 1 cup fresh or frozen blueberries

  • 1/2 tsp cinnamon (optional)

  • Butter or oil for the pan

  • Powdered sugar or extra honey/maple syrup, for topping (optional)


🥣 Instructions:

  1. Make the filling:

    • In a small bowl, mix cream cheese, honey, and vanilla extract until smooth.

    • (Optional: stir in a dash of cinnamon.)

  2. Assemble quesadillas:

    • Spread the cream cheese mixture over half of each tortilla.

    • Sprinkle blueberries evenly on top.

    • Fold the tortilla in half to create a half-moon shape.

  3. Cook:

    • Heat a skillet over medium heat and add a bit of butter or oil.

    • Place the quesadillas in the pan and cook for 3–4 minutes per side, or until golden brown and crispy.

    • If using frozen blueberries, cook a little longer to ensure they heat through.

  4. Serve:

    • Slice into wedges and serve warm.

    • Top with powdered sugar, a drizzle of maple syrup or honey, or even Greek yogurt on the side.


🍯 Optional Add-ins:

  • Thinly sliced bananas or strawberries

  • A sprinkle of granola for crunch

  • Nut butter swirled into the cream cheese
