Bourbon Chicken with Broccoli

Here’s a delicious recipe for Bourbon Chicken with Broccoli, a flavorful dish that’s easy to make and great for a weeknight dinner!

Bourbon Chicken with Broccoli Recipe

Ingredients

For the Chicken:

  • 1 lb (450 g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

For the Sauce:

  • 1/2 cup soy sauce
  • 1/4 cup bourbon (or apple juice for a non-alcoholic version)
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger (or 1/4 teaspoon ground ginger)
  • 1 tablespoon rice vinegar (or apple cider vinegar)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

For the Broccoli:

  • 2 cups broccoli florets
  • 1/4 cup water (for steaming)

Instructions

1. Cook the Chicken:

  • In a large skillet or wok, heat the olive oil over medium-high heat. Season the chicken pieces with salt and pepper.
  • Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

2. Prepare the Sauce:

  • In the same skillet, add the soy sauce, bourbon, brown sugar, minced garlic, grated ginger, and rice vinegar. Stir to combine and bring to a simmer.

3. Thicken the Sauce:

  • Add the cornstarch mixture to the sauce, stirring constantly until it thickens, about 1-2 minutes.

4. Add Chicken and Broccoli:

  • Return the cooked chicken to the skillet and stir to coat it in the sauce.
  • In a separate pot, steam the broccoli with the 1/4 cup of water until tender, about 3-4 minutes. You can also add the broccoli directly to the skillet during the last few minutes of cooking if you prefer.

5. Serve:

  • Serve the Bourbon Chicken over steamed rice, with the broccoli on the side or mixed in.
