Bramble and Lemon Bakewell Slice!

A Bramble and Lemon Bakewell Slice is a delightful dessert that combines the flavors of bramble (blackberry) and lemon in a classic Bakewell slice. Here’s a recipe for you:

Ingredients:

For the Shortcrust Base:

  • 1 cup all-purpose flour
  • 1/4 cup ground almonds
  • 1/2 cup unsalted butter, cold and diced
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • A splash of cold water, if needed

For the Filling:

  • 1/2 cup blackberry jam or bramble compote
  • Zest of 1 lemon

For the Almond Frangipane:

  • 1 cup ground almonds
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon almond extract

For the Lemon Icing:

  • 1 cup powdered sugar
  • Juice of 1 lemon
  • Lemon zest (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (180°C). Grease and line a square or rectangular baking pan.
  2. Prepare the Shortcrust Base:
    • In a food processor, combine the flour, ground almonds, butter, and sugar. Pulse until the mixture resembles breadcrumbs.
    • Add the egg yolk and pulse again until the dough comes together. If it’s too dry, add a splash of cold water.
    • Press the shortcrust dough into the prepared baking pan, creating an even layer. Prick the base with a fork.
  3. Bake the Base:
    • Bake the shortcrust base in the preheated oven for about 15 minutes or until it’s lightly golden. Remove from the oven and let it cool.
  4. Prepare the Almond Frangipane:
    • In a bowl, beat together the softened butter and sugar until creamy.
    • Add the ground almonds, eggs, and almond extract. Mix until well combined.
  5. Assemble the Bakewell Slice:
    • Spread the blackberry jam or bramble compote over the cooled shortcrust base.
    • Sprinkle the lemon zest over the jam.
    • Spoon the almond frangipane over the jam layer and spread it evenly.
  6. Bake Again:
    • Return the pan to the oven and bake for an additional 25-30 minutes or until the top is golden and the frangipane is set.
  7. Make the Lemon Icing:
    • In a bowl, mix together the powdered sugar and lemon juice to make a smooth icing.
    • Once the Bakewell slice has cooled, drizzle the lemon icing over the top. You can also sprinkle lemon zest for extra flavor.
  8. Chill and Serve:
    • Allow the Bakewell slice to cool completely before slicing it into squares. For best results, refrigerate it for a few hours before serving.
