Broccoli Cheese Rice Casserole

Here’s a comforting recipe for Broccoli Cheese Rice Casserole that’s perfect as a side dish or a main course!

Ingredients

For the Casserole:

  • 2 cups cooked rice (white or brown)
  • 2 cups fresh broccoli florets, chopped
  • 1 can (10.5 oz) cream of mushroom soup or cream of chicken soup
  • 1 cup sour cream
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste
  • 1/2 cup crushed Ritz crackers or breadcrumbs (optional, for topping)
  • 2 tablespoons melted butter (optional, for topping)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Blanch the Broccoli:
    • Bring a pot of salted water to a boil. Add the chopped broccoli florets and blanch for 2-3 minutes, until bright green and slightly tender. Drain and set aside.
  3. Mix the Casserole Filling:
    • In a large mixing bowl, combine the cooked rice, blanched broccoli, cream of mushroom soup, sour cream, 1 cup shredded cheddar cheese, Parmesan cheese, milk, garlic powder, onion powder, salt, and black pepper. Stir until well combined.
  4. Assemble the Casserole:
    • Pour the mixture into the greased baking dish and spread it out evenly.
  5. Add the Topping:
    • In a small bowl, mix the crushed Ritz crackers or breadcrumbs with the melted butter. Sprinkle the mixture over the top of the casserole.
    • Sprinkle the remaining 1/2 cup shredded cheddar cheese on top of the breadcrumbs.
  6. Bake the Casserole:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
    • Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the casserole is bubbly.
  7. Serve:
    • Let the casserole cool for a few minutes before serving.
