Broiling vegetables is a quick and easy way to achieve a caramelized, slightly crispy texture while maintaining their natural flavors. Here’s a simple recipe for broiled vegetables:

Ingredients:

  • Assorted vegetables (e.g., broccoli, bell peppers, zucchini, cherry tomatoes, mushrooms, asparagus)
  • Olive oil
  • Garlic powder
  • Onion powder
  • Paprika
  • Salt and black pepper
  • Fresh herbs (e.g., thyme, rosemary, parsley), chopped (optional)

Instructions:

  1. Preheat the Broiler:
    • Set your oven to the broil setting and allow it to preheat. Place the oven rack about 6 inches (15 cm) below the broiler element.
  2. Prepare the Vegetables:
    • Wash and chop the vegetables into bite-sized pieces. Ensure they are relatively uniform in size for even cooking.
  3. Toss with Olive Oil and Seasonings:
    • In a large bowl, toss the vegetables with olive oil, garlic powder, onion powder, paprika, salt, and black pepper. Use enough olive oil to coat the vegetables lightly.
  4. Arrange on a Baking Sheet:
    • Spread the seasoned vegetables in a single layer on a baking sheet. If you’re using different vegetables with varying cooking times, you can arrange them accordingly, placing quicker-cooking ones toward the center.
  5. Broil:
    • Place the baking sheet under the preheated broiler. Keep a close eye on the vegetables to prevent burning. Broil for about 8-12 minutes, turning the vegetables occasionally for even cooking.
  6. Check for Doneness:
    • The vegetables are done when they are tender and have a nice char on the edges. Cooking times may vary based on the size and type of vegetables.
  7. Garnish (Optional):
    • If desired, sprinkle the broiled vegetables with fresh chopped herbs, such as thyme, rosemary, or parsley, for added flavor.
  8. Serve:
    • Transfer the broiled vegetables to a serving dish and serve immediately. They are delicious on their own or as a side dish to complement a variety of meals.
