Stuffed Cabbage Rolls

Ingredients:

  • 1 large head of cabbage
  • 1 cup cooked rice
  • 1 cup finely chopped mushrooms (optional for a meaty texture)
  • 1 cup finely chopped onions
  • 1 cup grated carrots
  • 1 cup cooked lentils or chickpeas
  • 3 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Prepare the Cabbage:
    • Bring a large pot of water to a boil. Carefully remove the core of the cabbage and place the entire head in the boiling water.
    • Cook for about 5-7 minutes, or until the outer leaves are pliable. Remove from the pot and let cool.
    • Carefully peel off 12 large leaves and set aside. Reserve the remaining cabbage for another use.
  2. Make the Filling:
    • In a large skillet, heat the olive oil over medium heat. Add the onions and garlic, and sauté until translucent.
    • Add the mushrooms (if using), carrots, and cook until softened.
    • Stir in the cooked rice, lentils or chickpeas, smoked paprika, thyme, oregano, salt, and pepper. Mix well and cook for another 2-3 minutes. Remove from heat.
  3. Assemble the Rolls:
    • Preheat your oven to 375°F (190°C).
    • Lay a cabbage leaf flat and place about 2-3 tablespoons of filling at the base. Roll up tightly, tucking in the sides as you go. Repeat with remaining leaves and filling.
    • In a baking dish, spread half of the diced tomatoes and half of the tomato sauce on the bottom. Place the cabbage rolls seam-side down in the dish.
    • Pour the remaining diced tomatoes and tomato sauce over the rolls.
  4. Bake:
    • Cover the baking dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the cabbage is tender and the sauce is bubbling.
  5. Serve:
    • Garnish with fresh parsley before serving. Enjoy your delicious stuffed cabbage rolls as a main course.
