Cajun Shrimp Loaded Baked Potato

A Cajun shrimp loaded baked potato is a flavorful and satisfying dish that combines the spiciness of Cajun seasoning with the creamy goodness of a loaded baked potato. Here’s a basic recipe to make this delicious meal:

Ingredients:

For the Baked Potatoes:

  • 4 large baking potatoes (Russet or Idaho)
  • Olive oil
  • Salt and black pepper, to taste

For the Cajun Shrimp:

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning (store-bought or homemade)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup diced bell peppers (red, green, or a mix)
  • 1/2 cup diced onions
  • 1/2 cup diced celery
  • 1/2 cup diced tomatoes
  • Salt and black pepper, to taste
  • Fresh parsley or green onions, for garnish

For the Loaded Baked Potato Toppings:

  • Sour cream
  • Shredded cheddar cheese
  • Chopped green onions

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the baking potatoes thoroughly. Dry them with a paper towel.
  3. Rub the potatoes with a bit of olive oil and sprinkle with salt and black pepper. Pierce each potato a few times with a fork to allow steam to escape.
  4. Place the potatoes directly on the oven rack or on a baking sheet and bake for about 45-60 minutes, or until they are tender and a fork can easily be inserted into the center. The exact baking time may vary depending on the size of the potatoes.
  5. While the potatoes are baking, prepare the Cajun shrimp. In a bowl, toss the peeled and deveined shrimp with Cajun seasoning to coat them evenly.
  6. In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  7. Add the diced bell peppers, onions, and celery to the skillet. Cook for a few minutes until they become tender.
  8. Stir in the diced tomatoes and cook for an additional 2-3 minutes until the mixture is heated through.
  9. Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side or until they turn pink and opaque. Season with salt and black pepper to taste.
  10. Once the potatoes are baked, remove them from the oven. Make a lengthwise slit on the top of each potato, and gently squeeze the ends to open them up.
  11. Fill the baked potatoes with sour cream, shredded cheddar cheese, and chopped green onions.
  12. Top each loaded potato with the Cajun shrimp mixture.
  13. Garnish with fresh parsley or additional green onions.
