Cajun Shrimp & Salmon Salad

A Cajun shrimp and salmon salad is a flavorful and nutritious dish that combines spicy Cajun-seasoned shrimp and salmon with a variety of fresh vegetables and a zesty dressing. Here’s a recipe to make this delicious salad:Ingredients:

For the Cajun Shrimp and Salmon:

  • 8-12 large shrimp, peeled and deveined
  • 2 salmon fillets
  • 1 tablespoon Cajun seasoning (store-bought or homemade)
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

For the Salad:

  • 6 cups mixed greens (e.g., spinach, arugula, romaine)
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cucumber, sliced
  • 1/2 red bell pepper, thinly sliced
  • 1/4 cup sliced black olives
  • 1/4 cup crumbled feta cheese (optional)

For the Dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1/2 teaspoon Cajun seasoning
  • Salt and black pepper to taste

Instructions:

For the Cajun Shrimp and Salmon:

  1. Preheat your oven to 375°F (190°C).
  2. Rub the Cajun seasoning, salt, and black pepper onto both sides of the salmon fillets.
  3. Heat 2 tablespoons of olive oil in an oven-safe skillet over medium-high heat.
  4. Add the salmon fillets, skin-side down, and cook for about 2-3 minutes until the skin is crispy.
  5. Flip the salmon fillets and transfer the skillet to the preheated oven. Bake for 10-12 minutes or until the salmon is cooked through and flakes easily with a fork.
  6. While the salmon is baking, toss the peeled and deveined shrimp with 1 tablespoon of Cajun seasoning.
  7. Heat a separate skillet over medium-high heat and add the shrimp. Cook for about 2-3 minutes per side, or until they turn pink and opaque.

For the Dressing:

  1. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, Dijon mustard, honey, Cajun seasoning, salt, and black pepper. Set aside.

To Assemble the Salad:

  1. In a large salad bowl, arrange the mixed greens and top with the cherry tomatoes, red onion, cucumber, red bell pepper, sliced black olives, and crumbled feta cheese (if using).
  2. Once the salmon and shrimp are cooked, flake the salmon into bite-sized pieces.
  3. Add the Cajun shrimp and flaked salmon to the salad.
  4. Drizzle the dressing over the salad and toss everything to combine.
  5. Serve your Cajun shrimp and salmon salad immediately. Enjoy this flavorful and hearty salad as a complete meal!
