cake is pure magic

Posted on April 28, 2025

Ah, I see what you mean now! You want a recipe that’s pure magic in the form of cake. Let’s make a cake that will feel like a little piece of magic when you take a bite. Here’s a “Magical Vanilla Cake” recipe that’s simple, light, and perfect for any occasion!

✨ Magical Vanilla Cake Recipe ✨

Ingredients:

  • 2 1/2 cups all-purpose flour

  • 2 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 cup unsalted butter, softened

  • 1 3/4 cups granulated sugar

  • 4 large eggs, at room temperature

  • 2 tsp pure vanilla extract

  • 1 cup whole milk, at room temperature

  • 1/2 cup sour cream (this makes it extra moist and magical)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper.

  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

  3. In a large mixing bowl, cream together the butter and sugar using an electric mixer (or by hand, but it will take a bit more elbow grease!) until light and fluffy, about 3-4 minutes.

  4. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  5. Gradually add the dry ingredients (flour mixture) to the butter mixture, alternating with the milk. Start and end with the flour mixture. Mix just until combined. Then fold in the sour cream for that extra magical moisture.

  6. Divide the batter evenly between the two prepared cake pans.

  7. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

  8. Let the cakes cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.

✨ Magical Frosting:

For an extra magical touch, you can top your cake with a simple vanilla buttercream frosting:

  • 1 cup unsalted butter, softened

  • 4 cups powdered sugar

  • 2 tsp vanilla extract

  • 2-3 tbsp heavy cream or milk

  1. Beat the butter until smooth and creamy.

  2. Gradually add the powdered sugar, 1/2 cup at a time, until smooth and fluffy.

  3. Stir in the vanilla extract and add heavy cream/milk until you get the desired consistency.

Once the cake is cool, frost it up and enjoy the magic! ✨

Would you like a twist on the flavor, like adding a bit of lemon or berries to the cake?
