CAPRESE STUFFED AVOCADO

Caprese stuffed avocados combine the creamy richness of avocados with the classic flavors of a Caprese salad. Here’s a simple recipe:Ingredients:

  • 2 ripe avocados
  • 1 cup cherry or grape tomatoes, halved
  • 1/2 cup fresh mozzarella cheese, diced or torn into small pieces
  • Fresh basil leaves, chopped or torn
  • Balsamic glaze or balsamic reduction (optional)
  • Extra virgin olive oil
  • Salt and pepper to taste

Instructions:

  1. Cut the avocados in half and remove the pits. Scoop out a bit of the avocado flesh from each half to create a larger cavity for the filling, leaving some avocado around the edges.
  2. In a bowl, combine the halved cherry tomatoes, diced fresh mozzarella, and chopped basil leaves. Drizzle with a bit of olive oil and season with salt and pepper to taste. Gently toss to combine.
  3. Spoon the tomato, mozzarella, and basil mixture into the avocado halves, filling each cavity generously.
  4. Drizzle a little balsamic glaze or reduction over the stuffed avocados for added flavor (optional).
  5. Serve the Caprese stuffed avocados immediately as a tasty appetizer or light lunch.
