Here’s a delightful recipe for a Caramel Banana Roll Cake. It’s a light and fluffy sponge cake filled with a creamy caramel banana filling, perfect for any occasion!

Caramel Banana Roll Cake

Ingredients

For the Cake:
  • 4 large eggs, separated
  • 3/4 cup granulated sugar, divided
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
For the Filling:
  • 3 ripe bananas, mashed
  • 1/2 cup caramel sauce (store-bought or homemade)
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
For the Topping (Optional):
  • Additional caramel sauce for drizzling
  • Whipped cream or caramel shavings for garnish

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
  2. Prepare the Cake Batter:
    • In a large bowl, beat the egg yolks with 1/2 cup granulated sugar until thick and pale. Stir in the vanilla extract.
    • Sift together the flour, cornstarch, and salt. Gently fold the dry ingredients into the egg yolk mixture until just combined.
  3. Whip the Egg Whites:
    • In a clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining 1/4 cup granulated sugar and continue to beat until stiff peaks form.
    • Carefully fold the beaten egg whites into the batter, mixing until just incorporated.
  4. Bake the Cake:
    • Spread the batter evenly in the prepared jelly roll pan. Bake in the preheated oven for 12-15 minutes, or until the cake is golden and springs back when touched.
  5. Cool the Cake:
    • While the cake is baking, dust a clean kitchen towel with granulated sugar. When the cake is done, immediately turn it out onto the sugared towel. Peel off the parchment paper and roll the cake up with the towel. Let it cool completely.
  6. Prepare the Filling:
    • In a medium bowl, mix the mashed bananas with the caramel sauce. Set aside.
    • In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  7. Assemble the Roll Cake:
    • Unroll the cooled cake carefully. Spread the banana-caramel mixture evenly over the cake, leaving a small border around the edges. Dollop the whipped cream on top of the banana mixture and gently spread it out.
  8. Roll and Chill:
    • Roll the cake up again, using the towel to help you. Place the cake on a serving platter, seam side down. Chill in the refrigerator for at least 1 hour.
  9. Serve:
    • Before serving, drizzle the cake with additional caramel sauce and garnish with whipped cream or caramel shavings if desired.
