1. Cheesy Potato and Sausage Casserole

Ingredients:

  • 4 cups potatoes, peeled and sliced thin
  • 1 lb smoked sausage, sliced
  • 1 onion, diced
  • 2 cups shredded cheddar cheese
  • 2 cups milk
  • 2 tablespoons flour
  • 3 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Prepare Cheese Sauce: In a saucepan, melt butter over medium heat. Add the flour and whisk until smooth. Gradually add milk, whisking continuously until the sauce thickens. Stir in 1 1/2 cups of the cheddar cheese until melted. Season with salt and pepper.
  3. Assemble Casserole: In a greased 9×13 inch baking dish, layer half of the sliced potatoes, followed by half of the sausage and half of the onions. Pour half of the cheese sauce over the top. Repeat the layers.
  4. Bake: Cover the casserole with foil and bake for 60 minutes. Remove the foil, sprinkle the remaining 1/2 cup of cheddar cheese on top, and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.
  5. Serve: Garnish with chopped parsley and serve hot.

2. Chicken and Broccoli Rice Casserole

Ingredients:

  • 3 cups cooked chicken, shredded
  • 2 cups cooked rice
  • 2 cups broccoli florets, steamed
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
  • 2 tablespoons butter, melted

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Mix Ingredients: In a large bowl, combine the chicken, rice, broccoli, cream of chicken soup, mayonnaise, sour cream, cheddar cheese, garlic powder, salt, and pepper. Mix until well combined.
  3. Assemble Casserole: Transfer the mixture to a greased 9×13 inch baking dish.
  4. Prepare Topping: In a small bowl, mix the breadcrumbs with the melted butter. Sprinkle the breadcrumb mixture over the casserole.
  5. Bake: Bake for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
  6. Serve: Let the casserole cool for a few minutes before serving.

3. Beef and Mushroom Casserole

Ingredients:

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups sliced mushrooms
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup milk
  • 2 cups cooked pasta (e.g., penne or egg noodles)
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Cook Beef and Veggies: In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat. Add the onion, garlic, and mushrooms, and cook until the vegetables are softened.
  3. Combine Ingredients: Stir in the cream of mushroom soup, milk, and thyme. Season with salt and pepper. Mix in the cooked pasta until well combined.
