Cauliflower Bacon Gratin

Cauliflower bacon gratin is a delicious and comforting dish that combines tender cauliflower florets with crispy bacon and creamy cheese sauce, all baked to golden perfection. Here’s a recipe to make this flavorful gratin:Ingredients:

  • 1 large head cauliflower, cut into florets
  • 6 slices bacon, chopped
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 1/4 teaspoon ground nutmeg (optional)
  • Chopped fresh parsley, for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or similar-sized casserole dish.
  2. Place the cauliflower florets in a large pot of salted boiling water. Cook for 5-6 minutes, or until the cauliflower is just tender. Drain well and set aside.
  3. In a large skillet, cook the chopped bacon over medium heat until crispy. Use a slotted spoon to transfer the cooked bacon to a plate lined with paper towels to drain excess grease. Set aside.
  4. In the same skillet, melt the butter over medium heat. Stir in the flour and cook, stirring constantly, for 1-2 minutes to make a roux.
  5. Gradually whisk in the milk, stirring constantly to prevent lumps from forming. Cook until the mixture thickens and comes to a simmer, about 5 minutes.
  6. Reduce the heat to low and stir in the shredded cheddar cheese and grated Parmesan cheese until melted and smooth. Season with salt, pepper, and ground nutmeg, if using. Taste and adjust seasoning as needed.
  7. Add the cooked cauliflower florets and crispy bacon to the cheese sauce in the skillet. Stir until everything is evenly coated with the sauce.
  8. Transfer the cauliflower bacon mixture to the prepared baking dish, spreading it out into an even layer.
  9. Bake in the preheated oven for 20-25 minutes, or until the gratin is bubbly and golden brown on top.
  10. Remove the gratin from the oven and let it cool for a few minutes before serving.
  11. Garnish with chopped fresh parsley, if desired, before serving.
  12. Serve the cauliflower bacon gratin hot as a delicious side dish or a comforting main course.
