1. Cheesy Baked Macaroni and Cheese

Ingredients:

  • 8 oz (225g) elbow macaroni
  • 2 cups (475ml) milk
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups (230g) shredded sharp cheddar cheese
  • 1 cup (115g) shredded mozzarella cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon mustard powder
  • Salt and black pepper to taste
  • 1/2 cup (50g) grated Parmesan cheese
  • 1/2 cup (50g) breadcrumbs (optional)

Instructions:

  1. Cook the Macaroni:
    • Cook the macaroni according to package instructions. Drain and set aside.
  2. Prepare the Cheese Sauce:
    • In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until lightly golden.
    • Gradually whisk in the milk, cooking and stirring until the mixture thickens and comes to a simmer.
    • Reduce heat to low and stir in the cheddar cheese, mozzarella cheese, garlic powder, onion powder, mustard powder, salt, and black pepper until smooth.
  3. Combine and Bake:
    • Stir the cooked macaroni into the cheese sauce until well coated.
    • Transfer the mixture to a greased baking dish.
    • Sprinkle Parmesan cheese and breadcrumbs (if using) over the top.
    • Bake in a preheated 350°F (175°C) oven for 20-25 minutes, or until the top is golden and bubbly.

2. Cheesy Baked Potatoes

Ingredients:

  • 4 large russet potatoes
  • 1 cup (230g) shredded cheddar cheese
  • 1/2 cup (115g) sour cream
  • 1/4 cup (60g) unsalted butter, melted
  • 2 tablespoons chopped chives or green onions
  • Salt and black pepper to taste

Instructions:

  1. Prepare the Potatoes:
    • Preheat your oven to 400°F (200°C). Wash and dry the potatoes.
    • Pierce each potato with a fork and bake directly on the oven rack for 45-60 minutes, or until tender.
  2. Make the Topping:
    • Once the potatoes are cool enough to handle, cut them in half lengthwise and scoop out the flesh into a bowl.
    • Mash the potato flesh with melted butter, sour cream, chives, salt, and pepper.
  3. Assemble and Bake:
    • Spoon the mashed potato mixture back into the potato skins.
    • Top with shredded cheddar cheese.

Ingredients:

  • 4 cups (300g) broccoli florets
  • 1 cup (230g) shredded cheddar cheese
  • 1/2 cup (120ml) heavy cream
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • 1/4 cup (25g) grated Parmesan cheese
  • 1/4 cup (25g) breadcrumbs (optional)

Instructions:

  1. Cook the Broccoli:
    • Preheat your oven to 375°F (190°C). Steam or blanch the broccoli florets until just tender, then drain.
  2. Prepare the Cheese Sauce:
    • In a medium saucepan, heat the heavy cream over medium heat. Stir in the cheddar cheese, garlic powder, onion powder, salt, and pepper until smooth and melted.
  3. Combine and Bake:
    • Arrange the broccoli in a greased baking dish.
    • Pour the cheese sauce over the broccoli and stir to coat.
    • Sprinkle Parmesan cheese and breadcrumbs (if using) over the top.
