Here’s a delicious recipe for Cheesy Beef Stuffed Potato Cakes. These savory treats are filled with a flavorful beef mixture and gooey cheese, then crispy on the outside. Perfect as a hearty snack or a main dish!

Cheesy Beef Stuffed Potato Cakes

Ingredients

For the Potato Cakes:
  • 4 large potatoes, peeled and grated
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg, lightly beaten
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions (optional)
  • 1 tablespoon vegetable oil (for frying)
For the Beef Filling:
  • 1 lb (450g) ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and black pepper, to taste
  • 1/2 cup shredded cheese (cheddar or mozzarella)

Instructions

  1. Prepare the Potatoes:
    • Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible. Transfer the potatoes to a large bowl.
  2. Mix the Potato Cake Ingredients:
    • To the grated potatoes, add the flour, salt, pepper, egg, shredded cheddar cheese, and chopped green onions. Mix well until everything is combined.
  3. Cook the Beef Filling:
    • In a skillet over medium heat, cook the ground beef with the chopped onion and minced garlic until the beef is browned and the onions are soft. Drain any excess fat. Stir in the paprika, cumin, salt, and black pepper. Remove from heat and let cool slightly.
  4. Assemble the Potato Cakes:
    • Take a small portion of the potato mixture and flatten it into a patty. Place a spoonful of the beef mixture in the center and top with a bit of shredded cheese. Cover with another portion of the potato mixture, sealing the edges to encase the filling.
  5. Fry the Potato Cakes:
    • Heat the vegetable oil in a large skillet over medium heat. Add the stuffed potato cakes and cook for 4-5 minutes on each side, or until golden brown and crispy. You may need to do this in batches to avoid overcrowding the pan.
  6. Serve:
    • Serve the Cheesy Beef Stuffed Potato Cakes hot, with a side of sour cream or a dipping sauce of your choice.
