Cheesy Ground Beef and Rice Casserole

Here’s a delicious and comforting recipe for Cheesy Ground Beef and Rice Casserole:

Ingredients:

  • 1 lb (450 g) ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup (190 g) uncooked white rice
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 2 cups (480 ml) beef broth
  • 1 cup (240 ml) frozen corn (optional)
  • 1 teaspoon chili powder (optional)
  • 1 teaspoon cumin (optional)
  • Salt and pepper to taste
  • 2 cups (about 8 oz) shredded cheese (cheddar, mozzarella, or your favorite)
  • Fresh parsley or cilantro for garnish (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Cook the Beef: In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  3. Combine Ingredients: Stir in the uncooked rice, diced tomatoes (with juices), beef broth, corn (if using), chili powder, cumin, salt, and pepper. Bring to a simmer.
  4. Transfer to Casserole Dish: Pour the mixture into a greased 9×13-inch (or similar size) casserole dish. Cover with aluminum foil.
  5. Bake: Bake in the preheated oven for 45-50 minutes, or until the rice is tender and has absorbed most of the liquid. Stir halfway through to ensure even cooking.
  6. Add Cheese: Remove the casserole from the oven, uncover, and sprinkle the shredded cheese evenly on top. Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  7. Garnish and Serve: Once done, let the casserole sit for a few minutes before serving. Garnish with chopped parsley or cilantro, if desired.
