Cheesy Sausage Muffins

Ingredients:

  • 1 lb (450g) breakfast sausage (you can use pork or turkey sausage)
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp garlic powder (optional for extra flavor)
  • 1/2 tsp dried thyme or Italian seasoning (optional)
  • 2 large eggs
  • 1 cup milk (whole or 2% milk works best)
  • 1/4 cup unsalted butter, melted
  • 1 1/2 cups shredded cheddar cheese (or your favorite cheese)
  • 1/4 cup chopped green onions (optional, for garnish)

Instructions:

  1. Preheat and Prepare:

    • Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line it with muffin liners.
  2. Cook the Sausage:

    • In a skillet, cook the sausage over medium heat until it’s browned and fully cooked, breaking it apart with a spoon as it cooks. Drain excess fat and set the sausage aside to cool slightly.
  3. Make the Muffin Batter:

    • In a large bowl, combine the flour, baking powder, salt, pepper, garlic powder, and thyme (or Italian seasoning).
    • In a separate bowl, whisk together the eggs, milk, and melted butter until well combined.
    • Add the wet ingredients to the dry ingredients and stir just until combined. Don’t overmix; the batter should be thick.
    • Gently fold in the cooked sausage and shredded cheese until evenly distributed.
  4. Fill the Muffin Tin:

    • Spoon the batter evenly into the muffin cups, filling each about 3/4 of the way full. You should get 12 muffins.
    • Optionally, sprinkle a little extra cheese on top of each muffin for extra cheesiness.
  5. Bake:

    • Bake for 20-25 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center comes out clean.
  6. Cool and Serve:

    • Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely, or serve them warm.

Tips:

  • For an extra cheesy version, add a little extra shredded cheese to the batter or on top before baking.
  • If you prefer a spicier muffin, you can add a pinch of red pepper flakes or use a spicier sausage.
  • These muffins freeze well! Just let them cool completely, then store them in an airtight container or freezer bag. Reheat in the microwave for a quick breakfast.
