Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded or diced
  • 1 cup macaroni or any small pasta
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper, to taste
  • Optional: Parmesan cheese, grated, for serving
  • Optional: Fresh parsley, chopped, for garnish

Instructions:

  1. Sauté Aromatics:
    • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for 5-7 minutes, or until the vegetables are softened.
  2. Add Garlic and Herbs:
    • Add the minced garlic to the pot and sauté for an additional minute, until fragrant.
    • Stir in the dried thyme and dried parsley, and season with salt and pepper to taste.
  3. Add Broth and Chicken:
    • Pour the chicken broth into the pot, stirring to combine with the vegetables.
    • Add the cooked chicken to the pot and bring the mixture to a simmer.
  4. Add Pasta:
    • Once the soup is simmering, add the macaroni or small pasta to the pot.
    • Cook the soup according to the pasta package instructions, usually for about 8-10 minutes, until the pasta is tender.
  5. Adjust Seasonings:
    • Taste the soup and adjust the seasoning with salt and pepper as needed.
  6. Serve:
    • Once the pasta is cooked and the soup is seasoned to your liking, remove the pot from the heat.
    • Ladle the chicken and macaroni soup into bowls.
    • Optionally, garnish each serving with grated Parmesan cheese and chopped fresh parsley.
  7. Enjoy:
    • Serve the chicken and macaroni soup hot, alongside crusty bread or crackers for a complete meal.
