Here’s a Chicken Bacon Ranch Potato Bake recipe that combines juicy chicken, crispy bacon, and creamy ranch flavor, all baked over tender potatoes. It’s a hearty and delicious dish that’s sure to be a family favorite!

Ingredients:

  • 4 large russet potatoes, peeled and cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 lb chicken breast (or thighs), cut into bite-sized pieces
  • 4 slices bacon, cooked and crumbled
  • 1 packet ranch seasoning mix (or 3 tbsp homemade ranch seasoning)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup ranch dressing
  • Salt and pepper, to taste
  • 2 tbsp chopped green onions (optional, for garnish)

Instructions:

1. Prepare the Potatoes:

  • Preheat your oven to 375°F (190°C).
  • Toss the cubed potatoes with 1 tablespoon olive oil, salt, and pepper. Spread them evenly in a baking dish (9×13-inch works well).
  • Roast the potatoes in the oven for about 25-30 minutes, or until they are tender and slightly crispy on the edges, stirring halfway through.

2. Cook the Chicken:

  • While the potatoes are roasting, heat the 1 tablespoon olive oil in a large skillet over medium heat.
  • Add the chicken pieces to the skillet, seasoning with a pinch of salt and pepper. Cook for about 7-8 minutes, until the chicken is cooked through and golden brown. Remove from heat.

3. Prepare the Sauce:

  • In a small bowl, combine the sour cream, ranch dressing, and ranch seasoning mix. Stir until smooth.

4. Assemble the Bake:

  • Once the potatoes are done roasting, remove them from the oven and layer the cooked chicken and crumbled bacon on top of the potatoes.
  • Pour the ranch sauce over the chicken and potatoes, and then sprinkle the shredded cheddar cheese evenly over the top.

5. Bake:

  • Return the dish to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

6. Serve:

  • Remove from the oven and sprinkle with chopped green onions (if using) for a burst of color and flavor.
  • Serve hot and enjoy!

Tips:

  • You can make this dish ahead of time and refrigerate it before baking. Just add an extra 10-15 minutes to the baking time when you’re ready to cook.
  • If you prefer a bit more crunch, sprinkle some crumbled crackers or French fried onions on top before baking.
  • For extra flavor, use smoked bacon or add a little garlic powder to the ranch sauce.
