Casserole:

  • 3 cups cooked chicken, shredded or diced (use rotisserie chicken for convenience)
  • 2 cans (10.5 oz each) cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 2 cans (16.3 oz each) refrigerated biscuit dough, cut into quarters
  • 1 cup frozen peas and carrots, thawed (optional)
  • 1/4 cup chopped fresh parsley (optional, for garnish)

Topping:

  • 1/4 cup melted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley

Instructions:

Step 1: Prepare the Oven and Baking Dish

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.

Step 2: Make the Casserole

  1. Mix Chicken and Sauce:
    • In a large bowl, combine the cooked chicken, cream of chicken soup, sour cream, milk, garlic powder, onion powder, and black pepper. Mix well until fully combined.
  2. Add Cheese and Vegetables:
    • Stir in 1 1/2 cups of the shredded cheddar cheese and the thawed peas and carrots, if using.
  3. Add Biscuit Dough:
    • Gently fold in the biscuit dough quarters until they are evenly coated with the sauce mixture.
  4. Transfer to Baking Dish:
    • Pour the mixture into the prepared baking dish, spreading it out evenly.

Step 3: Bake the Casserole

  1. Bake:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 35-40 minutes.
  2. Remove Foil and Add Topping:
    • Remove the foil, sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top, and return to the oven.

Step 4: Prepare the Topping

  1. Mix Topping:
    • In a small bowl, combine the melted butter, garlic powder, and dried parsley.
  2. Drizzle Topping:
    • Drizzle the butter mixture evenly over the top of the casserole.

Step 5: Finish Baking

  1. Bake Until Golden:
    • Continue baking for an additional 10-15 minutes, or until the biscuits are golden brown and cooked through, and the cheese is melted and bubbly.
  2. Cool Slightly:
    • Remove from the oven and let the casserole cool for a few minutes.

Step 6: Serve

  1. Garnish and Serve:
    • Garnish with chopped fresh parsley if desired. Serve warm.

Tips:

  • Chicken: Use rotisserie chicken for convenience or cook your own chicken breasts or thighs.
  • Vegetables: Feel free to add other vegetables like broccoli, corn, or green beans based on your preference.
  • Biscuits: Make sure to cut the biscuit dough into quarters for even baking.
