CHICKEN MUSHROOM & SPINACH LASAGNA

Certainly! Chicken, Mushroom, and Spinach Lasagna is a delightful variation of the classic lasagna. Here’s a recipe for you:

Ingredients:

For the Filling:

  • 2 cups cooked and shredded chicken
  • 2 cups sliced mushrooms
  • 2 cups fresh spinach, chopped
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

For the Sauce:

  • 4 cups marinara sauce
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Additional Layers:

  • Lasagna noodles, cooked according to package instructions
  • 3 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese

For Garnish:

  • Fresh basil or parsley, chopped

Instructions:

  1. Prepare the Filling:
    • In a large skillet, heat olive oil over medium heat. Add chopped onions and garlic, sauté until softened.
    • Add sliced mushrooms and cook until they release their moisture and become golden brown.
    • Add shredded chicken, chopped spinach, dried thyme, dried oregano, salt, and pepper. Cook until the spinach wilts and the mixture is well combined. Remove from heat.
  2. Prepare the Sauce:
    • In a saucepan, combine marinara sauce, chicken broth, and heavy cream. Season with salt and pepper. Bring to a simmer and let it cook for a few minutes until well combined.
  3. Assemble the Lasagna:
    • Preheat your oven to 375°F (190°C).
    • In a large baking dish, spread a thin layer of the sauce on the bottom.
    • Place a layer of cooked lasagna noodles on top.
    • Add a portion of the chicken, mushroom, and spinach filling over the noodles.
    • Pour a portion of the sauce over the filling.
    • Sprinkle with mozzarella and Parmesan cheese.
    • Repeat the layers until all the ingredients are used, finishing with a layer of sauce and cheese on top.
  4. Bake:
    • Cover the baking dish with foil and bake in the preheated oven for about 25-30 minutes.
    • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the lasagna is heated through.
  5. Garnish:
    • Remove from the oven and let it rest for a few minutes before slicing.
    • Garnish with chopped fresh basil or parsley.
