Chicken Rice-A-Roni Casserole is a comforting, creamy, and super easy dish made with pantry staples. It’s perfect for busy weeknights, potlucks, or a cozy family dinner.

Ingredients:

  • 1 box Chicken or Herb & Butter Rice-A-Roni

  • 2–3 cups cooked chicken, shredded or cubed

  • 1 can (10.5 oz) cream of chicken soup (or cream of mushroom)

  • 1/2 cup sour cream or plain Greek yogurt

  • 1/2–1 cup shredded cheddar cheese (plus extra for topping, optional)

  • 1/2 cup milk (optional for creamier texture)

  • Salt, pepper, garlic powder to taste

  • Optional toppings: French fried onions, buttered breadcrumbs, or extra cheese

  1. Preheat oven to 350Β°F (175Β°C). Lightly grease a 9×13″ baking dish.

  2. Prepare the Rice-A-Roni per box instructions (usually involves browning the rice/vermicelli in butter, then simmering with water and seasoning packet).

  3. Once rice is fully cooked, stir in:

    • Cooked chicken

    • Cream of chicken soup

    • Sour cream

    • Cheese

    • (Optional) Milk for extra creaminess

    • Season to taste with salt, pepper, and garlic powder

  4. Spread mixture into prepared baking dish.

  5. Top with extra cheese, breadcrumbs, or French fried onions if desired.
