Ingredients:
- 1 lb (450g) flank steak or sirloin, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch
- 1 teaspoon sugar
- 1/2 teaspoon black pepper
- 3 tablespoons vegetable oil (divided)
- 1 onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, minced
- 1 tablespoon Shaoxing wine (optional)
- 1/2 cup beef broth or water
- 1 tablespoon soy sauce (for the sauce)
- 1 tablespoon oyster sauce (for the sauce)
- 1 teaspoon cornstarch (for the sauce)
- Cooked white rice for serving
Instructions:
- In a bowl, combine the sliced beef with soy sauce, oyster sauce, cornstarch, sugar, and black pepper. Let it marinate for at least 15-20 minutes.
- In a small bowl, mix together the sauce ingredients: soy sauce, oyster sauce, and cornstarch. Set aside.
- Heat 2 tablespoons of vegetable oil in a wok or a large skillet over high heat. Add the marinated beef and stir-fry for 2-3 minutes or until it’s browned. Remove the beef from the wok and set it aside.
- In the same wok, add the remaining tablespoon of oil. Add the sliced onion, bell peppers, garlic, and ginger. Stir-fry for 2-3 minutes until the vegetables are slightly tender but still crisp.
- Return the cooked beef to the wok. Add the Shaoxing wine (if using) and stir-fry for another minute.
- Pour in the beef broth or water and the prepared sauce. Stir well and let it simmer for 2-3 minutes until the sauce thickens.
- Adjust the seasoning if necessary. Serve the Chinese Pepper Steak over cooked white rice.
