Chinese Pepper Steak with Onions is a savory and satisfying dish that combines tender beef with crisp bell peppers and onions in a flavorful sauce. Here’s how to make it:

Chinese Pepper Steak with Onions

Ingredients:

For the Marinade:

  • 1 pound (450g) flank steak or sirloin, thinly sliced against the grain
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon Shaoxing wine or dry sherry
  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil

For the Stir Fry:

  • 2 tablespoons vegetable oil (or peanut oil)
  • 1 large onion, sliced
  • 1 red bell pepper, sliced into strips
  • 1 green bell pepper, sliced into strips
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2-3 green onions, sliced (optional, for garnish)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon white pepper (optional)
  • Cooked white rice, for serving

For the Sauce:

  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce (optional, for a sweeter flavor)
  • 1 tablespoon cornstarch
  • 1/2 cup beef broth or water
  • 1 teaspoon sugar
  • 1/2 teaspoon sesame oil

Instructions:

  1. Marinate the Beef:
    • In a bowl, combine the soy sauce, oyster sauce, Shaoxing wine, cornstarch, and sesame oil. Add the sliced beef and toss to coat evenly. Let the beef marinate for at least 15-20 minutes, or up to 1 hour for more flavor.
  2. Prepare the Sauce:
    • In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce (if using), cornstarch, beef broth, sugar, and sesame oil. Set aside.
  3. Cook the Vegetables:
    • Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the sliced onions and stir-fry for 2-3 minutes until they start to soften.
    • Add the sliced bell peppers and stir-fry for another 3-4 minutes until the peppers are tender-crisp. Remove the vegetables from the wok and set them aside.
  4. Cook the Beef:
    • In the same wok, add another tablespoon of oil. Once the oil is hot, add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
    • Add the marinated beef to the wok in a single layer. Let it sear for about 1-2 minutes without stirring, then stir-fry the beef until it is just cooked through, about 2-3 more minutes.
  5. Combine and Stir-Fry:
    • Return the cooked onions and bell peppers to the wok with the beef. Stir to combine.
    • Pour the prepared sauce over the beef and vegetables. Stir-fry for another 1-2 minutes until the sauce thickens and evenly coats the beef and vegetables.
  6. Serve:
    • Remove the wok from the heat and transfer the Chinese Pepper Steak with Onions to a serving dish.
    • Garnish with sliced green onions if desired. Serve hot with steamed white rice.

Tips:

  • Beef Selection: Flank steak or sirloin are ideal for this dish because they’re tender when sliced thinly against the grain.
  • Vegetable Variations: Feel free to add other vegetables like mushrooms, snow peas, or baby corn to the stir fry.
