🍫 Classic Chocolate Mousse

🧂 Ingredients (Serves 4–6):

6 oz (170g) semi-sweet or dark chocolate, chopped

3 tbsp unsalted butter

3 large eggs, separated

¼ cup granulated sugar

1 cup heavy cream

1 tsp vanilla extract

Pinch of salt

Melt the Chocolate:

In a heatproof bowl over a pan of simmering water (double boiler), melt chocolate and butter together until smooth.

Let it cool slightly.

Whip Egg Whites:

In a clean bowl, beat the egg whites with a pinch of salt until soft peaks form.

Gradually add sugar and beat until stiff peaks form.

Whip the Cream:

In a separate bowl, beat heavy cream and vanilla until soft peaks form. Set aside.

Mix Egg Yolks:

Stir egg yolks into the slightly cooled chocolate mixture (make sure it’s not hot, or the yolks will scramble).

Fold It All Together:

Gently fold the whipped cream into the chocolate mixture.

Then fold in the egg whites in 2–3 additions, being careful not to deflate the mixture.

Chill:

Spoon into individual cups or bowls.

Chill for at least 2 hours (or overnight) until set.
