Cinnamon Pancakes are a warm, fluffy, and flavorful twist on the classic pancake. The sweet and spicy cinnamon flavor makes these pancakes extra delicious and perfect for breakfast or brunch. Here’s an easy recipe to make your own Cinnamon Pancakes:

Cinnamon Pancakes Recipe

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1 large egg
  • 1 1/4 cups milk (whole or 2% preferred)
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/4 tsp ground nutmeg (optional, for extra spice)
  • Butter or oil for cooking
  • Maple syrup (for serving)

Instructions:

  1. Prepare the Dry Ingredients:

    • In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg (if using). Make sure the dry ingredients are evenly mixed.
  2. Mix the Wet Ingredients:

    • In a separate bowl, whisk the egg, milk, melted butter, and vanilla extract until combined.
  3. Combine Wet and Dry Ingredients:

    • Pour the wet ingredients into the dry ingredients. Gently stir to combine. Be careful not to overmix; it’s okay if the batter is a little lumpy. Overmixing can make the pancakes tough.
  4. Cook the Pancakes:

    • Heat a nonstick skillet or griddle over medium heat. Lightly grease with butter or oil.
    • For each pancake, pour about 1/4 cup of batter onto the hot skillet. You can make the pancakes bigger or smaller depending on your preference.
    • Cook for about 2-3 minutes, or until bubbles form on the surface of the pancake and the edges start to look set.
    • Flip the pancakes and cook for another 1-2 minutes, or until golden brown and cooked through. Continue with the remaining batter.
  5. Serve:

    • Stack the pancakes on a plate, drizzle with maple syrup, and add extra butter or whipped cream if desired.
    • You can also top with a sprinkle of cinnamon sugar, fresh fruit, or chopped nuts for extra flavor.

Tips:

  • For Extra Cinnamon Swirl: If you like a cinnamon swirl in your pancakes, you can mix 2 tbsp of cinnamon and 2 tbsp of sugar and sprinkle it in a spiral pattern over the pancake after you pour it on the skillet. Use a toothpick to swirl it into the batter before flipping.
  • Fluffier Pancakes: Let the batter sit for a few minutes before cooking. This helps the baking powder activate, making the pancakes fluffier.
  • Make-Ahead: You can make the pancakes ahead of time and store them in the fridge. To reheat, just microwave or heat them in a skillet for a minute or two.
