Here’s a recipe for a classic beef stew that’s hearty and comforting:

Classic Beef Stew

Ingredients:

  • 1.5 lbs (680g) beef chuck or stew meat, cut into bite-sized pieces
  • 2 tablespoons all-purpose flour
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 potatoes, peeled and cubed
  • 1 tablespoon tomato paste
  • 4 cups beef broth
  • 1 bay leaf
  • 1 teaspoon dried thyme (or 2-3 sprigs of fresh thyme)
  • Chopped fresh parsley, for garnish (optional)

Instructions:

  1. Coat and Brown the Beef:
    • In a bowl, toss the beef pieces with flour, salt, and pepper until evenly coated.
    • Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the beef in batches and brown on all sides. Remove the browned beef and set aside.
  2. Sauté the Vegetables:
    • In the same pot, add diced onion and garlic. Sauté for 2-3 minutes until onions are translucent.
  3. Add Remaining Ingredients:
    • Stir in carrots, celery, and potatoes. Cook for another 5 minutes, stirring occasionally.
    • Add tomato paste and cook for 1-2 minutes to enhance flavor.
    • Pour in beef broth and stir to combine, scraping up any browned bits from the bottom of the pot.
    • Add bay leaf and dried thyme (if using fresh thyme, tie it into a bundle with kitchen twine for easy removal later).
  4. Simmer:
    • Bring the stew to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through. Stir occasionally.
  5. Serve:
    • Remove the bay leaf and thyme sprigs (if using). Adjust seasoning with salt and pepper, if needed.
    • Ladle the beef stew into bowls. Garnish with chopped fresh parsley, if desired.
    • Serve hot and enjoy this classic beef stew with crusty bread or over mashed potatoes.

Tips:

  • Beef Selection: Use beef chuck or stew meat for tender results after simmering.
  • Vegetable Variations: Feel free to add other vegetables like peas, green beans, or mushrooms.
  • Make Ahead: This stew improves in flavor when made ahead of time. Store leftovers in the refrigerator for up to 3 days or freeze for longer storage.
