Ingredients:

  • 2 cups sweetened shredded coconut
  • 2/3 cup granulated sugar
  • 2 large egg whites
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup flour (optional for added structure)
  • 1/4 teaspoon baking powder (optional, for a lighter texture)

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 325°F (163°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.
  2. Mix the ingredients:
    • In a large mixing bowl, combine the shredded coconut, sugar, salt, and optional flour and baking powder.
    • In a separate bowl, beat the egg whites with a hand mixer or whisk until soft peaks form (about 2-3 minutes).
    • Gently fold the egg whites into the coconut mixture until everything is well combined. The egg whites will help bind the coconut and create a chewy texture.
  3. Shape the coconut chewies:
    • Using a spoon or your hands, form small mounds of the coconut mixture (about 1 tablespoon each) and place them onto the prepared baking sheet, spacing them about 2 inches apart.
  4. Bake the coconut chewies:
    • Bake for about 15-20 minutes, or until the tops are golden brown and the edges are slightly crispy. The centers should remain chewy.
  5. Cool and serve:
    • Once baked, remove from the oven and let the coconut chewies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Tips:

  • Add-ins: You can stir in some chocolate chips, chopped nuts (like almonds or macadamias), or even a little bit of cocoa powder for variety.
  • For a chewy texture: If you like your coconut chewies extra chewy, you can use sweetened condensed milk in place of some of the sugar for a richer texture.
  • Storage: Store them in an airtight container at room temperature for up to a week.
