Coconut-Pecan German Chocolate Pie

Ingredients

For the Crust:
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 3-4 tablespoons ice water
For the Filling:
  • 4 oz German sweet chocolate, chopped
  • 2 oz semisweet chocolate, chopped
  • 1/4 cup unsalted butter
  • 1 (12 oz) can evaporated milk
  • 1 1/4 cups granulated sugar
  • 3 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
For the Topping:
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 3 large egg yolks
  • 1 cup evaporated milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups sweetened shredded coconut
  • 1 cup chopped pecans

Instructions

  1. Prepare the Crust:
    • In a large bowl, combine the flour and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Gradually add the ice water, 1 tablespoon at a time, until the dough comes together.
    • Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  3. Roll Out the Crust:
    • On a lightly floured surface, roll out the dough to fit a 9-inch pie dish. Transfer the dough to the pie dish, trim the excess, and crimp the edges. Set aside.
  4. Make the Filling:
    • In a medium saucepan over low heat, melt the German sweet chocolate, semisweet chocolate, and butter, stirring until smooth. Remove from heat.
    • In a large bowl, whisk together the evaporated milk, sugar, eggs, and vanilla extract. Gradually add the melted chocolate mixture, stirring constantly until well combined.
    • Pour the filling into the prepared pie crust.
  5. Bake the Pie:
    • Bake in the preheated oven for 45-50 minutes, or until the filling is set and a toothpick inserted into the center comes out clean. Allow the pie to cool completely on a wire rack.
  6. Prepare the Topping:
    • In a medium saucepan, melt the butter over medium heat. Stir in the sugar, egg yolks, evaporated milk, and vanilla extract. Cook, stirring constantly, until the mixture thickens, about 10-12 minutes.
    • Remove from heat and stir in the shredded coconut and chopped pecans. Allow the topping to cool slightly before spreading it over the cooled pie.
  7. Serve:
    • Slice and serve your Coconut-Pecan German Chocolate Pie. Enjoy!
