Coconut Sweet Potato Pie is a delicious and unique twist on the traditional sweet potato pie. The coconut adds a rich, tropical flavor that complements the sweetness and earthiness of the sweet potatoes. Here’s a recipe to make Coconut Sweet Potato Pie:

Ingredients:

For the Pie Filling:

  • 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
  • 1 cup sweetened shredded coconut
  • 3/4 cup sugar (you can use brown sugar or white sugar)
  • 1/2 cup coconut milk (or regular milk)
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt

For the Pie Crust:

  • 1 pre-made pie crust (or you can make your own from scratch)
  • OR you can make a coconut-flavored crust by adding shredded coconut to the dough.

For Topping (Optional):

  • Whipped cream or a dollop of coconut whipped cream
  • Additional toasted coconut for garnish

Instructions:

Preparing the Pie Filling:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Cook the Sweet Potatoes: Peel the sweet potatoes and cut them into chunks. Boil in a pot of water for about 10-15 minutes until soft. Drain and mash until smooth.
  3. Prepare the Coconut Filling: In a large bowl, combine the mashed sweet potatoes with the sugar, coconut milk, melted butter, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix well.
  4. Add the Coconut: Stir in the shredded coconut, ensuring it’s evenly distributed throughout the filling.

Assembling the Pie:

  1. Prepare the Pie Crust: If you’re using a pre-made pie crust, place it in a 9-inch pie pan. You can also lightly toast some shredded coconut in a dry pan and press it into the crust for added coconut flavor.
  2. Fill the Crust: Pour the sweet potato-coconut filling into the pie crust and smooth the top.
  3. Bake: Bake in the preheated oven for about 45-50 minutes, or until the filling is set and a knife inserted into the center comes out clean. You may want to cover the edges of the crust with foil to prevent over-browning.
  4. Cool: Let the pie cool to room temperature. It will set further as it cools.

Serving:

  • You can serve the pie with whipped cream, or for an added coconut touch, top it with coconut whipped cream or more toasted coconut.
  • Slice and enjoy!
