Corn Casserole Recipe

Ingredients:

  • 1 (15 oz) can of whole kernel corn, drained
  • 1 (15 oz) can of cream-style corn
  • 1 box of Jiffy cornbread mix (or another brand of cornbread mix)
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup sour cream
  • 1 large egg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheddar cheese (optional, for extra cheesy flavor)
  • 1/4 cup chopped green onions (optional, for garnish)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Grease a 9×9-inch or 9×13-inch baking dish with non-stick spray or butter.
  2. Mix the Ingredients:

    • In a large mixing bowl, combine the whole kernel corn, cream-style corn, cornbread mix, melted butter, sour cream, egg, salt, and pepper.
    • Stir everything together until it’s well combined. If you’re adding shredded cheese, stir it in now.
  3. Pour and Bake:

    • Pour the corn mixture into the prepared baking dish and spread it out evenly.
    • Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  4. Serve:

    • Let the casserole cool for a few minutes before serving. You can sprinkle chopped green onions on top for added flavor and color, if desired.

Optional Add-ins:

  • Cheese: Add extra shredded cheese (cheddar, mozzarella, or Monterey Jack) to make it extra cheesy.
  • Jalapeños or Green Chilies: Add a little spice by tossing in chopped jalapeños or green chilies.
  • Bacon Bits: For a savory twist, you can add crumbled bacon on top before baking.
  • Bell Peppers: Add chopped bell peppers for a slight crunch and extra color.

Tips:

  • Make Ahead: You can prepare the casserole the day before, cover it with foil, and refrigerate it. Then just bake it the next day, but be sure to add a few extra minutes of baking time if it’s cold from the fridge.
  • Texture: If you prefer a firmer texture, reduce the amount of sour cream or increase the amount of cornbread mix slightly.
