CORN FRITTERS

Corn fritters are a delightful treat that combines the sweetness of corn with a crispy exterior. Here’s a simple recipe you can try:Ingredients:

  • 2 cups fresh or frozen corn kernels (thawed if using frozen)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1/4 cup milk
  • 2 green onions, finely chopped
  • 1/4 cup finely chopped red bell pepper (optional)
  • Oil for frying (vegetable oil or canola oil)

Instructions:

  1. Prepare the Batter: In a mixing bowl, combine the flour, cornmeal, baking powder, salt, and black pepper.
  2. Mix Wet Ingredients: In another bowl, whisk together the eggs and milk until well combined.
  3. Combine Ingredients: Add the egg and milk mixture to the dry ingredients, stirring until just combined. Avoid overmixing; some lumps are okay. Fold in the corn kernels, chopped green onions, and red bell pepper (if using).
  4. Heat Oil: Heat about 1/4 inch of oil in a skillet or frying pan over medium heat. The oil should be hot enough that a drop of batter sizzles immediately when added.
  5. Fry the Fritters: Once the oil is hot, spoon about 2 tablespoons of batter for each fritter into the hot oil. Flatten slightly with the back of the spoon. Cook the fritters in batches, being careful not to overcrowd the pan.
  6. Fry Until Golden: Fry the fritters for about 2-3 minutes on each side or until they turn golden brown and crispy. Use a spatula to flip them halfway through cooking.
  7. Drain and Serve: Once cooked, transfer the fritters to a plate lined with paper towels to drain excess oil. Serve the corn fritters warm as a delicious appetizer or side dish.

These corn fritters are versatile and can be served with a dipping sauce like sour cream mixed with lime juice or a spicy mayo. They’re perfect for brunch, parties, or as a tasty snack any time of the day!
