Country Apple Fritter Bread

Ingredients:

For the Bread:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 2 teaspoons vanilla extract

For the Apple Filling:

  • 2-3 medium-sized apples, peeled, cored, and diced (such as Granny Smith or Honeycrisp)
  • 2 tablespoons unsalted butter
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • Pinch of nutmeg
  • 1 tablespoon lemon juice

For the Glaze (Optional):

  • 1 cup powdered sugar
  • 2-3 tablespoons milk or heavy cream
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat Oven and Prepare Pan:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. Prepare the Apple Filling:
    • In a skillet over medium heat, melt 2 tablespoons of butter.
    • Add the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook until the apples soften slightly and the mixture thickens (about 5-7 minutes). Set aside to cool.
  3. Prepare the Bread Batter:
    • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
    • In a separate bowl, beat the eggs, then add melted butter, milk, and vanilla extract. Mix well.
    • Combine the wet ingredients with the dry ingredients, stirring until just combined. Do not overmix.
  4. Assemble the Bread:
    • Pour half of the batter into the prepared loaf pan.
    • Spread half of the apple filling evenly over the batter.
    • Add the remaining batter over the apple layer and top with the rest of the apple mixture, gently pressing it into the batter.
  5. Bake:
    • Bake in the preheated oven for about 50-60 minutes or until a toothpick inserted into the center comes out clean.
    • If the bread begins to brown too quickly, tent it loosely with foil during the last 15-20 minutes of baking.
  6. Make the Glaze (Optional):
    • Whisk together powdered sugar, milk or cream, and vanilla extract until smooth. Adjust the consistency by adding more milk if needed.
  7. Glaze and Serve:
    • Once the bread has cooled for about 10-15 minutes, drizzle the glaze over the top.
    • Allow the bread to cool completely in the pan before slicing and serving.
