Cream Cheese and Bacon Stuffed Doritos Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 4 oz cream cheese, softened
  • 1/2 cup cooked bacon, crumbled
  • 1 cup shredded cheddar cheese
  • 2 cups Doritos (Nacho Cheese flavor), crushed
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Chicken:
    • Using a sharp knife, carefully cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
  3. Make the Filling:
    • In a medium bowl, mix together the softened cream cheese, crumbled bacon, and shredded cheddar cheese until well combined.
  4. Stuff the Chicken:
    • Spoon the cream cheese mixture into each chicken breast pocket. Secure the opening with toothpicks if needed to keep the filling inside.
  5. Set Up the Breading Station:
    • Place the flour in one shallow dish, the beaten eggs in another, and the crushed Doritos in a third shallow dish. Season the flour with garlic powder, onion powder, salt, and pepper.
  6. Bread the Chicken:
    • Dredge each stuffed chicken breast in the flour, shaking off any excess. Dip it into the beaten eggs, then coat it with the crushed Doritos, pressing the crumbs onto the chicken to adhere well.
  7. Bake:
    • Place the breaded chicken breasts on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the coating is crispy and golden brown. The internal temperature should reach 165°F (74°C).
  8. Garnish and Serve:
    • Remove the toothpicks from the chicken breasts. Garnish with chopped fresh parsley if desired, and serve immediately.

Tips:

  • Crushing Doritos: Place Doritos in a ziplock bag and crush them with a rolling pin or pulse in a food processor until they reach a fine crumb consistency.
  • Bacon: Use thick-cut bacon for a more substantial flavor. Cook until crispy before crumbling.
  • Variations: Add chopped green onions or jalapeños to the cream cheese mixture for an extra kick of flavor.
