Here’s a refreshing recipe for Creamy Lemon Delight, a perfect dessert that combines a zesty lemon flavor with a smooth, creamy texture:

Creamy Lemon Delight

Ingredients

For the Crust:
  • 1 1/2 cups crushed graham crackers (about 10 full sheets)
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
For the Filling:
  • 2 cups heavy whipping cream
  • 1 (14 oz) can sweetened condensed milk
  • 1/2 cup fresh lemon juice (about 3-4 lemons)
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract
For the Topping (Optional):
  • Whipped cream or whipped topping
  • Lemon slices or zest for garnish

Instructions

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • In a medium bowl, combine the crushed graham crackers, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.
    • Press the mixture firmly into the bottom of a 9×13-inch baking dish or a 9-inch pie dish.
    • Bake in the preheated oven for 10 minutes, then let it cool completely.
  2. Make the Filling:
    • In a large mixing bowl, whip the heavy cream until stiff peaks form. Set aside.
    • In another bowl, whisk together the sweetened condensed milk, fresh lemon juice, lemon zest, and vanilla extract until well combined.
    • Gently fold the whipped cream into the lemon mixture until fully incorporated. Be careful not to deflate the whipped cream.
  3. Assemble the Dessert:
    • Pour the lemon filling over the cooled crust, spreading it out evenly.
    • Refrigerate for at least 2 hours, or until set.
  4. Serve:
    • Before serving, top with whipped cream or whipped topping and garnish with lemon slices or additional lemon zest, if desired.
