Creamy vegetable noodle soup is a comforting and satisfying dish, perfect for any time of the year. Here’s a simple recipe to make it:

Ingredients:

  • 8 cups vegetable broth
  • 2 tablespoons olive oil or butter
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 1 cup sliced mushrooms
  • 1 cup chopped broccoli florets
  • 1 cup chopped cauliflower florets
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 cup dry pasta (such as small shells or elbow macaroni)
  • 1 cup heavy cream or coconut cream (for a dairy-free option)
  • Chopped fresh parsley, for garnish (optional)

Instructions:

  1. In a large pot or Dutch oven, heat the olive oil or butter over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent, about 5 minutes.
  2. Add the sliced carrots and celery to the pot, and sauté for an additional 5 minutes, stirring occasionally.
  3. Stir in the sliced mushrooms, chopped broccoli, and chopped cauliflower. Cook for another 5 minutes, until the vegetables begin to soften.
  4. Add the vegetable broth to the pot, along with the dried thyme and dried oregano. Season with salt and pepper to taste.
  5. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 15-20 minutes, or until the vegetables are tender.
  6. While the soup is simmering, cook the pasta according to the package instructions in a separate pot. Drain and set aside.
  7. Once the vegetables are tender, stir in the cooked pasta and heavy cream or coconut cream. Let the soup simmer for an additional 5 minutes to heat through and allow the flavors to meld together.
  8. Taste the soup and adjust the seasoning if necessary.
  9. Ladle the creamy vegetable noodle soup into bowls, and garnish with chopped fresh parsley if desired.
  10. Serve the soup hot and enjoy its comforting flavors!
