Crispy Fried Pork

Crispy Fried Pork is a delicious dish with juicy, tender pork on the inside and a golden, crispy coating on the outside. It’s perfect for serving as a main course or as a flavorful snack. Here’s how you can make it at home:

Crispy Fried Pork Recipe

Ingredients:

  • 1 lb pork shoulder or pork belly, cut into bite-sized pieces
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp oyster sauce
  • 2 cloves garlic, minced
  • 1 tsp ground black pepper
  • 1 tsp sugar
  • 1 egg, beaten
  • 1/2 cup cornstarch or all-purpose flour
  • 1/2 cup rice flour (optional, for extra crispiness)
  • Vegetable oil for frying

Instructions:

1. Marinate the Pork:

  • In a large bowl, combine the soy sauce, fish sauce, oyster sauce, minced garlic, black pepper, and sugar.
  • Add the pork pieces to the marinade and mix well to ensure each piece is evenly coated.
  • Cover the bowl and let the pork marinate in the refrigerator for at least 30 minutes to 1 hour (or overnight for more flavor).

2. Prepare the Coating:

  • In a separate bowl, beat the egg.
  • In another bowl, combine the cornstarch and rice flour (if using).

3. Coat the Pork:

  • Dip each piece of marinated pork into the beaten egg, then dredge it in the cornstarch-flour mixture, ensuring it’s fully coated.

4. Fry the Pork:

  • Heat vegetable oil in a deep pan or wok over medium-high heat. The oil should be hot but not smoking (around 350°F or 175°C).
  • Carefully add the coated pork pieces to the hot oil in batches, making sure not to overcrowd the pan.
  • Fry the pork for about 5-7 minutes, turning occasionally, until golden brown and crispy on all sides.
  • Use a slotted spoon to remove the pork from the oil and drain it on a paper towel-lined plate.

5. Serve:

  • Serve the crispy fried pork hot, garnished with fresh herbs or a squeeze of lime. It pairs well with a dipping sauce, like sweet chili sauce, soy sauce with a dash of vinegar, or garlic sauce.

Tips:

  • Double Frying: For extra crispiness, you can double fry the pork by frying it once until light golden, removing it from the oil, then frying it again at a higher temperature for a shorter time.
  • Serving: This dish can be served with rice, in tacos, or as a topping for salads.
  • Seasoning Variations: Feel free to experiment with different seasonings in the marinade, like paprika, chili flakes, or five-spice powder, to suit your taste.
