Crispy Garlic Butter Potato Cheese Bombs

Ingredients:

  • For the Potato Filling:

    • 4 medium potatoes, peeled and boiled
    • 1/2 cup shredded cheddar cheese (or a cheese blend)
    • 1/4 cup cream cheese, softened
    • 1/4 cup sour cream (optional, for extra creaminess)
    • 2 tablespoons butter, melted
    • 1 teaspoon garlic powder
    • Salt and pepper, to taste
    • 2 tablespoons fresh chives or green onions, chopped (optional)
  • For the Coating:

    • 1/2 cup all-purpose flour
    • 1/2 cup breadcrumbs (panko for extra crispiness)
    • 1/4 teaspoon paprika (optional, for extra flavor)
    • Salt and pepper, to taste
    • 1 egg, beaten (for egg wash)
  • For the Garlic Butter:

    • 4 tablespoons butter, melted
    • 2 cloves garlic, minced
    • 1 tablespoon fresh parsley, chopped (for garnish)
    • 1/2 teaspoon salt (optional, for seasoning)

Instructions:

  1. Prepare the Potato Filling:

    • Boil the peeled potatoes in salted water until tender, about 12-15 minutes. Drain and mash them well in a large bowl.
    • Add the melted butter, cream cheese, sour cream (if using), garlic powder, salt, and pepper to the mashed potatoes. Mix until smooth and well combined.
    • Stir in the shredded cheddar cheese and chopped chives or green onions (if using). The cheese will melt into the warm potatoes.
    • Let the potato mixture cool slightly so it’s easier to handle.
  2. Shape the Cheese Bombs:

    • Take about 1 tablespoon of the potato mixture and roll it into a ball using your hands. Make sure to seal it well so that the cheese filling stays inside.
    • Repeat with the remaining mixture.
  3. Coat the Cheese Bombs:

    • In one shallow bowl, place the flour. In a second bowl, beat the egg. In a third bowl, place the breadcrumbs, paprika (optional), salt, and pepper.
    • Roll each potato ball first in the flour, then dip it into the beaten egg, and finally coat it thoroughly with the breadcrumb mixture. Set aside on a plate.
  4. Fry the Cheese Bombs:

    • Heat vegetable oil in a large skillet over medium heat (about 350°F/175°C). The oil should be enough to submerge the potato bombs halfway.
    • Fry the potato cheese bombs in batches for 2-3 minutes per side or until golden brown and crispy.
    • Use tongs to remove the cheese bombs and place them on a paper towel-lined plate to drain excess oil.
  5. Prepare the Garlic Butter:

    • While the cheese bombs are frying, melt the butter in a small saucepan over low heat.
    • Add the minced garlic and sauté for about 1 minute, just until fragrant. Remove from heat and stir in the chopped parsley and salt.
  6. Toss in Garlic Butter:
