Here’s a recipe for a decadent and creamy mushroom soup that’s perfect for cozy nights!

Decadent and Creamy Mushroom Soup

Ingredients

  • 1 lb (450 g) fresh mushrooms (e.g., cremini, shiitake, or button), sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • 4 cups (1 liter) vegetable or chicken broth
  • 1 cup (240 ml) heavy cream
  • Salt and pepper, to taste
  • Optional garnish: chopped fresh parsley or chives

Instructions

1. Sauté the Vegetables:

  • In a large pot, melt the butter and olive oil over medium heat.
  • Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
  • Stir in the minced garlic and cook for another minute until fragrant.

2. Cook the Mushrooms:

  • Add the sliced mushrooms to the pot. Cook, stirring occasionally, until the mushrooms are browned and have released their moisture, about 10-15 minutes.
  • Add the thyme and season with salt and pepper.

3. Add Broth:

  • Pour in the broth and bring the mixture to a simmer. Let it cook for about 10 minutes to allow the flavors to meld.

4. Blend the Soup:

  • Remove the pot from heat. For a smoother texture, use an immersion blender to puree the soup until smooth. (You can also carefully transfer it to a blender in batches.)

5. Add Cream:

  • Return the blended soup to low heat and stir in the heavy cream. Heat gently until warmed through. Adjust seasoning with more salt and pepper if needed.

6. Serve:

  • Ladle the soup into bowls and garnish with chopped fresh parsley or chives, if desired.
