Decadent Chocolate Bundt Cake

Ingredients:

For the Cake:

  • 1 3/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder (preferably Dutch-process)
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs, at room temperature
  • 1 cup whole milk, at room temperature
  • 1/2 cup vegetable oil (or melted butter)
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1/2 cup sour cream or Greek yogurt, at room temperature

For the Chocolate Glaze:

  • 4 oz semi-sweet chocolate, chopped
  • 1/4 cup unsalted butter
  • 1/4 cup heavy cream
  • 1 tsp vanilla extract
  • 2 tbsp powdered sugar (optional, for extra sweetness)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour a 10-inch bundt pan, or use a non-stick spray with flour to ensure the cake comes out easily.
  2. Prepare the Cake Batter:
    • In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
    • In another bowl, whisk together the sugar, eggs, milk, vegetable oil, and vanilla extract until smooth and combined.
    • Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix, or the cake might be dense.
    • Stir in the sour cream or Greek yogurt to add moisture and a slight tanginess.
    • Lastly, pour in the boiling water and mix until the batter is smooth. The batter will be thin, but that’s okay; it helps make the cake extra moist.
  3. Bake the Cake:
    • Pour the batter into the prepared bundt pan, spreading it out evenly.
    • Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
    • Remove the cake from the oven and let it cool in the pan for 10-15 minutes. Then, carefully invert the cake onto a wire rack to cool completely.
  4. Prepare the Chocolate Glaze:
    • In a small saucepan, melt the chopped chocolate and butter over medium heat, stirring constantly until smooth.
    • Once melted, remove the saucepan from the heat and stir in the heavy cream and vanilla extract. If you prefer a sweeter glaze, whisk in powdered sugar to taste.
    • Let the glaze cool slightly to thicken, but it should still be pourable when you drizzle it over the cake.
  5. Assemble the Cake:
    • Once the cake is completely cooled, drizzle the chocolate glaze over the top of the bundt cake, allowing it to drip down the sides.
    • If desired, you can garnish with chocolate shavings, sprinkles, or a dusting of powdered sugar for an extra touch.
  6. Serve:
    • Slice and serve the cake! It pairs wonderfully with a scoop of vanilla ice cream, whipped cream, or fresh berries.
