Delicious No-Bake Cheesecake with Waffle Crust

Here’s a Delicious No-Bake Cheesecake with Waffle Crust recipe that’s simple, creamy, and indulgent!

Ingredients:

For the Waffle Crust:

  • 2 cups waffle crumbs (about 4-5 waffles, crushed)
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons sugar (optional)

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice (optional, for a tangy flavor)
  • 1/2 cup sour cream (optional, for added creaminess)

For Topping (optional):

  • Fresh fruit (berries, sliced fruit, or fruit compote)
  • Chocolate shavings or caramel drizzle

Instructions:

1. Make the Waffle Crust:

  • Crush the waffles into small crumbs using a food processor, or place them in a zip-top bag and crush them with a rolling pin.
  • In a medium bowl, combine the waffle crumbs, melted butter, and sugar (if using). Stir until the mixture is well combined and resembles wet sand.
  • Press the mixture into the bottom of a 9-inch springform pan (or pie dish). Use the back of a spoon to press it down evenly and firmly to form the crust.
  • Place the crust in the fridge to chill while you prepare the cheesecake filling.

2. Prepare the Cheesecake Filling:

  • In a large bowl, beat the softened cream cheese until smooth and creamy using a hand mixer or stand mixer.
  • Add the powdered sugar, vanilla extract, and lemon juice (if using). Beat until smooth.
  • In a separate bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until fully combined. If using sour cream, fold it in as well.

3. Assemble the Cheesecake:

  • Remove the crust from the fridge and spoon the cheesecake filling over the crust.
  • Use a spatula to smooth the top and make it even.

4. Chill the Cheesecake:

  • Cover the cheesecake with plastic wrap or a lid and refrigerate for at least 4 hours, or overnight, to allow it to set properly.

5. Add Toppings (Optional):

  • Before serving, top the cheesecake with fresh fruit, fruit compote, chocolate shavings, or a drizzle of caramel for extra flavor and decoration.

6. Serve:

  • Slice and serve chilled. Enjoy your no-bake cheesecake with a delicious waffle crust!
