  • 3 large russet potatoes, thinly sliced

  • 1 pound lean ground beef, browned and crumbled

  • 2 large onions, sliced into rings

  • 1 can (15 oz) diced tomatoes or 2 large fresh tomatoes, sliced

  • 1½ green bell peppers, chopped

  • Kosher salt and freshly ground black pepper, to taste

  • Olive oil, as needed

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter or nonstick spray.

  2. Layer the ingredients in the prepared baking dish as follows:

    • Spread the sliced potatoes evenly at the bottom. Drizzle with olive oil and season with salt and pepper.

    • Top with the browned ground beef.

    • Add a layer of sliced onions.

    • Place the sliced tomatoes over the onions.
