Dorito Casserole

You got it! Here’s a crowd-pleasing, cheesy, crunchy Dorito Casserole — a comforting, Tex-Mex inspired dish that layers seasoned meat, creamy sauce, melty cheese, and crushed Doritos. It’s perfect for game day, weeknight dinners, or potlucks.


🔥 Dorito Casserole

📝 Ingredients:

Main Casserole:

  • 1 lb ground beef (or ground chicken/turkey)

  • 1 small onion, diced

  • 1 packet taco seasoning (or 2 tbsp homemade)

  • 1/2 cup water

  • 1 can (10 oz) Rotel (diced tomatoes with green chiles), undrained

  • 1 can (10 oz) cream of chicken or cream of mushroom soup

  • 1/2 cup sour cream

  • 2 cups shredded cheddar cheese (or a Mexican blend)

  • 1 bag (9.75 oz) Nacho Cheese Doritos, lightly crushed

Optional Add-ins:

  • 1 cup black beans or corn

  • 1/2 cup diced bell peppers

  • Sliced jalapeños or olives

  • Fresh cilantro, chopped (for garnish)


👨‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C).
    Lightly grease a 9×13-inch baking dish.

  2. Brown the meat:

    • In a skillet over medium heat, cook ground beef and diced onion until browned. Drain excess grease.

    • Add taco seasoning and water. Simmer for 3–4 minutes.

  3. Mix the filling:

    • Stir in Rotel, cream of soup, and sour cream.

    • Add optional beans, corn, or peppers if using.

    • Cook for another 2–3 minutes until everything is well combined and heated through.

  4. Layer the casserole:

    • Spread a layer of crushed Doritos in the bottom of the baking dish.

    • Add half of the meat mixture and sprinkle with 1/3 of the cheese.

    • Repeat: more Doritos, the rest of the meat mixture, and another 1/3 of the cheese.

    • Finish with a final layer of crushed Doritos and the remaining cheese.

  5. Bake:

    • Cover with foil and bake for 20 minutes.

    • Uncover and bake an additional 10–15 minutes until cheese is bubbly and slightly golden.

  6. Serve:

    • Let sit for 5 minutes before serving.

    • Top with fresh cilantro, sour cream, diced tomatoes, or jalapeños if desired.

  • Use spicy Nacho Doritos or Cool Ranch for a flavor twist.

  • For a vegetarian version, skip the meat and use black beans + corn + sautéed peppers.

  • Great with a side salad, guacamole, or Spanish rice.
