Dr Pepper Cake

Here’s a classic and indulgent Dr Pepper Cake recipe — rich, moist, and perfect for chocolate lovers and soda fans alike!


🍰 Dr Pepper Cake

Ingredients:

Cake:
  • 1 cup Dr Pepper (not diet)

  • ½ cup vegetable oil

  • ½ cup (1 stick) unsalted butter

  • ¼ cup unsweetened cocoa powder

  • 2 cups all-purpose flour

  • 2 cups granulated sugar

  • 1 tsp baking soda

  • ½ tsp salt

  • 2 large eggs

  • ½ cup buttermilk

  • 1 tsp vanilla extract

Optional:
  • 1 cup mini marshmallows (some Southern versions include this!)

Frosting (Dr Pepper Chocolate Icing):
  • ½ cup unsalted butter

  • ¼ cup Dr Pepper

  • ¼ cup unsweetened cocoa powder

  • 3–4 cups powdered sugar

  • 1 tsp vanilla extract

  • Pinch of salt


Instructions:

🔹 Make the Cake:

  1. Preheat Oven:
    350°F (175°C). Grease and flour a 9×13-inch pan.

  2. Heat Wet Mixture:
    In a saucepan, combine Dr Pepper, oil, butter, and cocoa powder. Heat over medium until it just starts to boil, stirring to combine. Remove from heat.

  3. Mix Dry Ingredients:
    In a large bowl, whisk together flour, sugar, baking soda, and salt.

  4. Combine:
    Slowly pour the warm Dr Pepper mixture into the dry ingredients and mix well.

  5. Add Eggs, Buttermilk, and Vanilla:
    Stir in eggs, buttermilk, and vanilla until smooth. Fold in marshmallows if using.

  6. Bake:
    Pour batter into prepared pan. Bake for 30–35 minutes, or until a toothpick comes out clean.


🔹 Make the Frosting:

  1. In a saucepan, heat butter, Dr Pepper, and cocoa powder until it just comes to a boil.

  2. Remove from heat and gradually whisk in powdered sugar, vanilla, and salt until smooth and spreadable.

  3. Pour over warm cake and spread evenly.


🎉 Tips & Variations:

  • Add chopped pecans or walnuts to the frosting for a Southern twist.

  • Use cherry Dr Pepper for a fun flavor variation.

  • Let the cake cool slightly before adding the frosting for a gooey glaze effect.
