Easy cabbage soup

Certainly! Here’s a simple recipe for easy cabbage soup:Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth (or chicken broth)
  • 1 small head cabbage, shredded (about 4-5 cups)
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Optional toppings: chopped fresh parsley, grated Parmesan cheese, crusty bread

Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook for 2-3 minutes until softened.
  2. Add the minced garlic to the pot and cook for another 1-2 minutes until fragrant.
  3. Pour in the vegetable broth and bring the mixture to a simmer.
  4. Add the shredded cabbage, sliced carrots, and sliced celery to the pot. Stir to combine.
  5. Add the diced tomatoes (with their juices) to the pot, along with the dried thyme and dried oregano. Stir well to combine.
  6. Season the soup with salt and pepper, to taste.
  7. Bring the soup to a boil, then reduce the heat to low. Cover the pot and let the soup simmer for about 20-25 minutes, or until the vegetables are tender.
  8. Once the vegetables are cooked through, taste the soup and adjust the seasoning if needed.
  9. Ladle the hot cabbage soup into bowls. If desired, garnish each bowl with chopped fresh parsley and grated Parmesan cheese.
  10. Serve the cabbage soup hot, accompanied by crusty bread for dipping or a side salad for a complete meal.
