Easy Chicken Stroganoff

Here’s a simple and delicious Easy Chicken Stroganoff recipe you can make in about 30 minutes:


🐔 Easy Chicken Stroganoff Recipe

Servings: 4
Prep Time: 10 minutes
Cook Time: 20 minutes

Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

  • 2 tablespoons olive oil or butter

  • 1 small onion, finely chopped

  • 2–3 cloves garlic, minced

  • 8 oz (225g) mushrooms, sliced

  • 1 teaspoon paprika (optional but recommended)

  • Salt and pepper to taste

  • 1 cup (240ml) chicken broth

  • 1 tablespoon flour (optional, for thickening)

  • 1/2 cup (120ml) sour cream (or Greek yogurt)

  • Cooked egg noodles, rice, or mashed potatoes (for serving)

  • Chopped parsley (for garnish)


Instructions:

  1. Cook the Chicken:

    • In a large skillet, heat the oil over medium heat.

    • Add the chicken pieces, season with salt, pepper, and paprika, and cook until browned and cooked through (about 5–7 minutes). Remove from the skillet and set aside.

  2. Sauté Veggies:

    • In the same skillet, add a little more oil if needed.

    • Sauté the onion and garlic for 1–2 minutes, then add the mushrooms.

    • Cook until the mushrooms are soft and any liquid has mostly evaporated (about 5–6 minutes).

  3. Make the Sauce:

    • Sprinkle in the flour (if using) and stir for 1 minute.

    • Slowly add the chicken broth while stirring, scraping up any browned bits from the pan.

    • Bring to a gentle simmer for 2–3 minutes, until slightly thickened.

  4. Finish It Off:

    • Lower the heat and stir in the sour cream until smooth.

    • Return the chicken to the pan and heat through for 2–3 minutes. Adjust seasoning with salt and pepper.

  5. Serve:

    • Serve hot over egg noodles, rice, or mashed potatoes.

    • Garnish with chopped parsley.
